Green teas are unoxidized and process by withering or wilting, followed by pan-firing or steaming, then a shaping process. During the shaping processes, further drying takes place, giving each green tea a distinct shape, character, and flavor. Often shaped by hand in places like China or Vietnam, the skill to craft these teas is passed down from generation to generation. In Japan, most of the tea processing is done mechanically, using machines and conveyor belts to steam, shape, and cool the teas.

Smooth and calming, a great introduction to green tea

I'm enjoying my 3rd steeping of this tea now with an afternoon 'biscuit' (almond shortbread). I'm new to drinking tea regularly and this is the first tea I like well enough to consistently make it to a second and third steeping. This is a subtle tea, simple with a nice flavor that doesn't demand a lot of attention. My husband, who appreciates a much wider variety of teas also really enjoys this tea. I don't have the vocabulary to properly describe the flavor. For those who are new to tea drinking, you may appreciate knowing that it doesn't have a strong seaweed flavor like some green teas. For 3 flavorful steepings, I brew this at 176 F for 90 seconds, 2 minutes & 5 minutes.
